Almost 25 years ago, when I was much younger and much thinner, I went on a little hike with my kids. Back then I only had 2. We got up before the sun, ate a quick breakfast and started hiking. Right around lunch time we could see the Colorado River from the bottom of the Grand Canyon . It was one of the most incredible experiences of my life and I hope theirs. We won’t talk about what it was like hiking back out again on the same day. I’ll leave that for another post. The point is I’ve always wanted to do that again. Time went by. I got remarried and had 2 more kids. I got older and fatter and stiffer. I always thought that even if I did get down to my goal weight these old bones would never make another trip like that. It made me kind of sad. But I’ve changed my mind. If a week of a vegetarian diet can make me feel this good, just think what a year can do? Kerrie and I made a promise to each other. We’re both going to get fit and healthy and we’re going to the bottom! I’ll plan the trip a little better this time. You have to make reservations to camp at the bottom over night, so we might take a couple of nights and explore the valley a bit before we make the hellish assent. But I’m going to the bottom again. Jeffry and Bonnie if you want to do it again let me know and Kelly if you want to go with us, we’d love to have you. I’m thinking maybe Memorial Day weekend 2013! What do you say?
Thurday – 20 Min. 1 mile on the elliptical
- Breakfast – An orange, whole grain toast and 1 cup of coffee.
- AM Snack – 2 medium sized carrots
- Lunch – Tofu burrito
- PM Snack – way too many Special K sour cream and onion cracker chips (Never go grocery shopping when you’re hungry)
- Dinner – Large loaded salad. (Looks yummy doesn’t it!)
